Is Sourdough Bread Easier on Your Digestion?

    Oct 13

Sourdough has earned a reputation as a healthier alternative to conventional bread. Its appeal goes beyond its tangy flavor: the fermentation process may make certain nutrients easier to absorb and help some people digest it more comfortably.

But sourdough isn’t automatically healthier for everyone. The ingredients, portion size and what you eat alongside it still matter.

    What makes sourdough different?

Unlike bread made with commercial yeast and a relatively quick rise, traditional sourdough relies on a starter containing wild yeast and bacteria. The longer fermentation process changes the dough before it reaches your plate.

Registered dietitians highlight three potential benefits:

    • Easier digestion for some people. Fermentation changes starches and partially breaks down certain proteins, which may make sourdough more tolerable for some people who experience bloating after eating conventional bread.
    • A potentially gentler blood sugar response. Organic acids produced during fermentation can affect how starch is digested. Some sourdough breads may therefore produce a smaller blood sugar rise than comparable refined breads, although results vary by recipe.
    • Improved mineral availability. Fermentation can reduce phytates, compounds that limit the absorption of minerals such as iron. The extent of this benefit depends on how the bread is made.

    Is sourdough suitable for everyone?

Not necessarily. Traditional sourdough is not automatically gluten-free. People with celiac disease should avoid ordinary wheat-based sourdough unless it is specifically made and verified to be gluten-free.

Some people with digestive sensitivities may tolerate sourdough better than other breads, but individual responses differ. It is not a guaranteed solution for bloating or other digestive symptoms.

How to make it part of a balanced meal

Enjoy a slice with eggs, avocado or nut butter, or pair it with vegetables and a source of protein. Fiber, protein and healthy fats can make a meal more satisfying and may help moderate its overall blood sugar response.

Pay attention to portion sizes, too, since sourdough still contributes carbohydrates and can contain considerable sodium depending on the recipe.

The smarter take: Sourdough’s fermentation gives it some potential advantages, but it isn’t a miracle food. Choose a bread you tolerate well, pair it with nutritious foods and pay attention to how your body responds.
